Tomato & Cheese Traybake

Quick, easy, creamy, and cheesy. Who doesn’t love a pasta bake?

 

There’s so much you can do with your homegrown tomatoes, but we love cooking them down into a sauce for this delicious pasta tray bake recipe. Full of flavour and fresh ingredients, we’re confident you’ll love this dish as much as we do.

Ingredients

Serves 1

1 tsp olive oil

1 diced onion

1 clove garlic, peeled and crushed

6 fresh tomatoes, halved

Fresh basil

Salt and pepper to taste

70g dried pasta such as rigatoni, penne, or fusilli

25g cream cheese

15g parmesan or hard cheese, finely grated

Method

Preheat the oven to 200°C.

Heat the oil in a pan over a medium-high heat. Add the onion and fry for one minute.

Stir in the garlic, tomatoes, and basil, and season with salt and pepper.

Simmer gently for 7 – 8 minutes until the tomatoes are soft, then remove from the heat.

Using a food processor or hand blender, blend the contents of the pan until smooth.

Cook the pasta according to the pack instructions and drain, reserving a little of the cooking water.

Pour the blended sauce into the pasta, as well as the reserved cooking water and cream cheese.

Stir until combined before transferring to an ovenproof dish.

Scatter over the parmesan and place into the oven for 15 minutes until golden brown.

Serve with fresh basil and a little extra sprinkling of grated parmesan.
