Think runner beans are boring? Well, they certainly don’t need to be.
It doesn’t take much to transform them into the perfect side dish, and this recipe with crispy, smoky bacon and herby butter will show you exactly how.
450g runner beans
8 rashers smoked streaky bacon
50g butter
Handful fresh parsley (or mint)
Salt and black pepper (to taste)
Trim the runner beans and boil or steam until just tender and still bright green.
Fry the bacon until crisp, then set aside. Once cooled, cut into small pieces.
Cut the runner beans diagonally.
Melt the butter in the same pan you cooked the bacon in, and stir through the herbs.
Toss in the runner beans, then add the crispy bacon.
Serve warm straight to the table as a side dish.
