Then look no further, because this sweetcorn relish might just be the best burger topping you’ve never tried.
700g sweetcorn
100g onion, finely chopped
100g sweet peppers
4 finely diced chilli peppers
100g brown sugar
2 tsp sea salt
3 tsp yellow mustard seeds
1 tsp sweet paprika
1 tsp black pepper
250ml cider vinegar
500ml water
Prepare the sweetcorn, peppers and onions, trying to chop the pepper to roughly the same size as a kernel of sweetcorn.
Add all of the remaining ingredients into a large pan with the vegetables and bring to a boil.
Once boiling, reduce the temperature and simmer for 10 minutes.
Pour into a jar and leave it to cool before storing in the fridge.
