Strawberry Eton Mess

What comes to mind when you think of a summer dessert? Eton Mess, of course.

 

With just four ingredients, this delicious recipe is super simple to make. Light and fresh, yet sweet and indulgent, there’s a reason this is such a classic British dessert. It’s easy to put together and it doesn’t have to be perfect – and that’s why so many of us love it.

Ingredients

Serves 6

 

Ready made meringues

500g strawberries, hulled and roughly chopped

450ml double cream

1tbsp icing sugar

Method

Using a hand blender, blitz ⅓ of the strawberries to make a strawberry sauce.

In a large bowl, whisk the cream with the icing sugar until it just holds its shape.

Add chopped strawberries to a bowl and roughly crush ¾ of the meringues. Mix together, then add to the whipped cream and stir in ¾ of the strawberry purée.

Dollop into bowls then crush the remaining meringues, sprinkling the pieces over the top.

Add fresh mint and a drizzle of strawberry purée.
